A truly wonderful day that will familiarise you with the basic Ligurian cooking ingredient, extra virgin olive oil, and then teach you how to create some of our more typical dishes. In the morning a visit to Museo dell’Olivio (The Olive Museum), which is closed on Tuesdays, with it’s annexed factory and adjacent shop, of the Fratelli Carli di Imperia Company. It won the European award for Museum of the Year in 1993 under the patronage of the Council of Europe. The museum is situated in the heart of Oneglia and supplies the olive oil market of a thousand year old tradition. At the end follows a visit to Porto Maurizio, characterised by its old historical centre, and fortified on the headland by the name of Parasio. Piazza del Duomo faces the Palazzo del Collegio and the Palazzo della Questura. Don’t miss the trip to the Logge di Santa Chiara with the adjacent convent of the same name, founded in 1365 and still today inhabited by the Clarisse Nuns of the Cloister. Back to the hotel for lunch and a short siesta. In the middle of the afternoon, you will attend the Corso di Cucina Ligure (Ligurian Cookery Course) in collaboration with l’Istituto Alberghiero “E. Ruffini” di Arma di Taggia. The course will allow you to discover the abundance of specialities linked to our local culinary tradition. Between dishes created by Chef you can appreciate Panissa, a type of polenta made with chick pea flour, Barbajuai, a fritter stuffed with pumpkin and ricotta, which will all lead you to our delicious desserts, for example stroscia, a dessert with a base of extra virgin oil, wine, flour and sugar. At the end of the course a dinner of mouth-watering tastes will be offered. |
