2. Testing the gold of the Riviera



This is a special day-trip which is perfect for small groups and that will make you get to know and love the real Mediterranean Diet.

In the morning you could visit the Giromela Olive Mill in Imperia where you can meet a tester of ONAOO (Organizzazione Nazionale Assaggiatori Olio d'Oliva - i.e., National Organisation of Olive Oil Testers) for an interesting course on extra-virgin olive oil testing.

Lunch at the Pietro Isnardi Alimentare Oil Firm where you can taste the so-called "new olive oil" of the season (November to March) together with some of the typical Imperia dishes.

In the afternoon you will visit the seventeenth-century "a sangue" oil mill that has been recently brought back into use. Here you will be able to see how olives were pressed in the past centuries. The visit to the modern oil mill will surprise you with an ancient type of olive press called Oleum Mundum which is based on the separation of pits from olives, so as to crush the pulp only. This technique can increase the olive oil stability and lower the degree of acidity. The result is an olive oil characterised by an intense and fresh aroma and a sharp and full-bodied taste.
