In the afternoon, a visit to the recently restored 17th century frantoio a sangue oil mill, demonstrating olive pressing as it was done in past centuries. The visit to the modern mill will surprise you with an ancient olive processing technique, Oleum Mundum, which provides for the separation of the pit from the olives, with the consequent processing of only the pulp. This type of processing increases the stability of the oil, decreases the degree of acidity and offers an oil with an intense and fresh aroma and strong and full-bodied flavor.
